Banana Bread French Toast

Inspired by a dish shown on Diners, Drive Ins and Dives this french toast is one of those meals that keeps you full for the entire day. It’s definitely not a meal for the weak or overly health-conscious. Still, use whole wheat flour to justify the indulgence and consider it a well-deserved treat. This is too good to pass up!
It starts with a basic banana bread base, which is then dipped in egg and cooked like normal french toast. If you don’t have much time to spare, banana bread mix is an easy shortcut. This version of the classic brunch food is hearty, savory from the bread and just mildly sweet from caramelized bananas.
We made this on one of the nicer days this spring and it was lovely! It took all morning, but then we weren’t hungry until late late evening. It was also quite a success on Easter with my family so I highly recommend making it – and not just for special occasions!
If you are baking your own banana bread, keep in mind that these loaves are particularly small due to the baking tin. If you choose to cut thick slices or are entertaining, plan ahead and make at least 3 -4 loaves depending on the amount of guests. It is a very filling meal, so plan on only about 1-2 pieces per guest.

Banana Bread French Toast
Ingredients:
Sliced pieces of banana bread
4 eggs
¼ cup milk
Pinch of cinnamon
banana, sliced
strawberries, sliced (optional)
walnuts or pecans (optional)You will also need a griddle or skillet.
Directions:
In a shallow bowl, mix the eggs, milk and cinnamon together with a whisk.
Dip each banana bread slice in the egg mixture, wetting each side until lightly soaked. Do not soak for too long so the bread does not fall apart!
On medium heat, melt a pat of butter in the skillet or griddle. Place each slice into the pan and cook, flipping once, until both side is slightly crisp and the eggs are cooked through.
After cooking all the bread, take the sliced bananas and strawberries and heat in the same pan until they soften and slightly brown. You can either add another pat of butter or let them cook in their own juices.
Plate the french toast, topping with fruit. Drizzle honey or nuts on top. Enjoy!
